1. Bring the water to a boil in a large pot and add 1 tablespoons salt.
2. Meanwhile, make the dressing. Combine sesame oil, tsuyu, sugar, honey, soy sauce and crushed garlic. Combine them well until the dressing is smooth. you won't need salt, but put a dash of salt if necessary.
3. Drop in the noodles into the boiled water until tender, probably a little bit less time than what packet instructions usually say. Drain them in a colander and then rinse with cool water.
4. Toss soba and vegetables and mix well. Put them in the fridge if you don't serve it now.
