Ingredients
- 300g mini tomato
- 45g garlic - finely chopped
- salt to taste
- olive oil
Instructions
- 1. Preheat the oven to 110 C degrees.
- 2. Wash tomatoes and cut them in half horizontally. Place tomatoes on the prepared baking sheet and sprinkle salt on the cut sides (to your taste). Leave them in the oven for 2 to 3 hours.
- 3. Put the dry tomatoes in food processor, or juice mixer. Add garlic and enough extra virgin olive oil to cover the tomatoes. Process until smooth.
- 4. Place the tomato paste in a sterilized jar. Store it in the fridge up to about 3 weeks. Use it in any recipe, for rice, pasta or vegetables.
Ingredients to make tomato rice
- 1 cup uncooked rice
- 1 cup water
- 2 tbs tomato paste ( add more depending on your taste.)
- 1/3 tsp fine salt
