Black burger buns

Ingredients

  • 230g bread flour (or 225g/T65 and 5g/gluten flour)
  • 10g black cocoa powder
  • 35g unsalted butter
  • 25g sugar
  • 1/2 tsp kosher salt
  • 1 egg + water = 175ml
  • 5g dry yeast

Instructions

  • 1. In a heat-safe bowl add butter. Microwave for about 30 sec. Butter will be softened but not melted.
  • 2. Add bread flour, gluten flour, sugar, salt, egg + water and softened butter in the pan of your bread machine. Add yeast in your machine's yeast compartment. Select dough cycle and press start as per manufacturer's instructions.
  • 3. When the dough cycle is complete, remove it from the machine and place on a floured surface.
  • 4. Punch the dough down and divide it in 8 pieces. Cover it with a damp cloth. Let it rest for about 15min.
  • 5. Shape each piece into a round ball then flatten them. Arrange on lined baking trays (or burger buns mold). Cover and let rise for 40~60min in a warm place or until the dough has doubled in volume.
  • 6. Bake in a preheated 180℃ oven for about 10min. Remove from the oven and let it cool down on a wire rack.

Ingredients

For 8 buns :

  • 260g bread flour (or 255g/T65 and 5g/gluten flour)
  • 20g white sugar
  • 4g kosher salt
  • 23g unsalted butter
  • 65ml whole milk
  • 130ml water
  • 1/2 tsp mayonnaise
  • 4g dry yeast

For 6 buns :

  • 200g bread flour (or 196g/T65 and 4g/gluten flour)
  • 15g white sugar
  • 3g kosher salt
  • 18g unsalted butter
  • 50ml whole milk
  • 100ml water
  • 1/2 tsp mayonnaise
  • 3g dry yeast

Instructions

  • 1. Add bread flour, (or T65 + gluten flour), sugar, salt, butter, milk, water and mayonnaise in the pan of your bread machine. Add yeast in your machine's yeast compartment. Select dough cycle and press start as per manufacturer's instructions.
  • 2. When the dough cycle is complete, remove it from the machine and place on a floured surface.
  • 3. Punch the dough down and divide it in 8 (or 6 pieces) pieces. Cover it with a damp cloth. Let it rest for 10 to 15min.
  • 4. Shape each piece into a round ball. Arrange on lined baking trays. Cover and let rise for 40~60min in a warm place or until the dough has doubled in volume.
  • 5. Bake in a preheated 180℃ oven for about 15min. Remove from the oven and let it cool down on a wire rack.

Ingredients

  • 200g bread flour (or 195g/T65 and 5g/gluten flour)
  • 3g kosher salt
  • 10g sugar
  • 15g unsalted butter
  • 1 tsp glucose syrup
  • 150g milk
  • 3g dry yeast

Instructions

  • 1. Add all the ingredients in the pan of your bread machine. Add yeast in the yeast compartment. Select dough cycle and press start as per manufacturer's instructions.
  • 2. When the dough cycle is complete, remove the dough from the machine and place on a floured surface.
  • 3. Punch the dough down and divide it in 6 pieces. Place in a oven tray with a baking sheet, seam side facing downwards. Use a damp towel (cloth) to cover the bread dough. Let them rest for about 15min.
  • 4. Re-Shape each piece into a round ball with a line in the middle of the bun, using a stick (eg. chopsticks). Arrange on lined baking trays. Cover with a damp cloth and let rise for 40~60min in a warm place or until the dough has doubled in volume. Lightly sprinkle flour over the bread, using a cooking sieve.
  • 5. Preheat the oven to 180℃ degree. Reduce the heat to 150℃ degree and bake for about 15 min. Remove from the oven and let it cool down on a wire rack.

Soft white bread buns with tofu - bread maker

Ingredients

  • 200g bread flour (or 195g/T65 and 5g/gluten flour)
  • 3g salt
  • 16g sugar
  • 130g milk
  • 15g margarine
  • 50g tofu firm
  • * You can also use "soft tofu" to make the buns even fluffier. It will make the dough quite soft so giving it a nice shape will become trickier. You can dust the dough with flour as you work on it, it will help (not too much though).
  • 3.5g dry yeast

Instructions

  • 1. Add all the ingredients in the pan of your bread machine. Add yeast in the yeast compartment. Select dough cycle and press start as per manufacturer's instructions.
  • 2. When the dough cycle is complete, remove the dough from the machine and place on a floured surface.

Ingredients

  • 60g unsalted butter - softened
  • 60g brown sugar
  • 50g white sugar
  • 25g egg - beaten
  • dash of salt
  • 1/4 tsp vanilla extract
  • 100g plain flour (or 97g of T45 and 3g gluten powder)
  • 1/4 tsp baking soda
  • 80g chocolate - cut into chunks

Instructions

  • 1. In a bowl, sift together flour, baking soda and salt. Set aside. Pre-heat the oven 175℃ degree.
  • 2. In a separate bowl, using electric hand mixer, cream together butter and sugars until combined.
  • 3. Add egg and vanilla and mix until fluffy.
  • 4. Mix in the dry ingredients from #1 until combined with a spatula.
  • 5. Add chocolate chunks and mix.
  • 6. Make balls of dough (about 30g each / or your own preference) and place on a cooking sheet.
  • 7. Bake for about 9~10min until the cookies look puffy but the centers still look soft. Do not overbake.
  • 8. Remove from the oven and allow to cool on the trays for about 5 minutes, then transfer the cookies to a wire rack to cool down completely.

Ingredients

  • 100g butter - soft
  • 35g sugar
  • 1 tbsp heavy cream
  • dash of salt to taste
  • 40g almond powder
  • 130g all-purpose flour (T55)
  • 1/2 tbsp corn starch
  • 1/2 tbsp cinnamon powder - sifted

Instructions

  • 1. In a bowl, add butter, sugar, heavy cream and salt. Mix well until smooth.
  • 2. Sift the flour mix (almond powder, flour, corn starch and cinnamon powder) into this bowl. Mix all well, using a rubber spatula until incorporated.
  • 3. Shape the dough into square block and let it sit in the refrigerator for about 30 mins.
  • 4. Pre-heat the oven to 160 C degree. Bake it for about 20 mins. Transfer to wire racks to cool completely.
