Basil paste

Ingredients

  • 65g basil leaf
  • 4 garlic cloves (about 30g)
  • 100ml olive oil
  • 50g pine nuts
  • 1/2 tbsp kosher salt (If you want to use the paste for fish or salad, I recommend to use less salt.)
  • 30g grated parmesan cheese
  • 1 tsp soy sauce
  • 1/2 tsp sugar

Instructions

  • 1. Put all the ingredients into the bowl of a food processor and process until finely pureed (or until smooth). Occasionally stop and scrape down the sides of the food processor with a rubber spatula to mix and combine evenly.
  • Note 1 - How to use
  • Serve with fish or meat. Obviously you can also use it as a pasta sauce! Adjust with salt to your taste.
  • Note 2 - If you don't use it on the spot
  • Place the paste in a zip-lock freezer bag, squeeze out the excess air, seal, and place in the freezer.

Basil and pistachio paste

Ingredients

  • 160g fresh basil
  • 30g pistachio nut
  • 30g cashew nut
  • 1 tsp kosher salt (or more if necessary)
  • 120ml olive oil
  • 4 garlic cloves
  • 45g your favorite cheese

Instructions

  • 1. Add all the ingredient into your food professor and process until smooth.
  • Enjoy with pasta or sauce for a fish.

Basil cream sauce

Ingredients

- Ingredient A -

  • 70g fresh basil leaves
  • 75ml olive oil
  • 40g cashew nuts
  • 4 garlic cloves
  • 1 tsp fine salt
  • 40g parmesan grated cheese
  • - Ingredient B -
  • 40g heavy cream
  • 130g sour cream

Instructions

  • 1. Add all the ingredient A into a food processor and process until smooth. Transfer into a bowl.
  • 2. Add "B" into the bowl and mix them together with the basil paste from Step #1 to combine evenly.
  • Add some salt if needed.
  • Serve with spaghetti, angel hair pasta, penne, etc...
