Pork dandan noodles

Ingredients

  • 600g ground pork
  • 3 garlic cloves - finely chopped
  • a thumb-size piece of ginger - finely chopped
  • 1 tbsp doubanjiang
  • 40g cashew nut - roughly crashed
  • 1 tsp szechuan peppercorns - roughly crashed

  • 1 leek - half chopped to fry, half stripe to garnish

Ingredient A

  • 3 tbsp tianmian jiang (sweet bean sauce)
  • 1 tbsp dark soy sauce
  • 2 tbsp chinese cooking wine
  • 1 tsp chinese black vinegar
  • 1/2 tbsp sichuan peppercorn oil
  • 1 tsp brown sugar
  • dash of kosher salt

For the soup

  • 1600ml water
  • 3 tbsp chinese chicken powder
  • 2 tbsp garlic cloves - finely chopped
  • 1 tbsp sesame
  • 20g cashew nut - finely chopped
  • 2 tbsp sesame paste
  • 1/2 tbsp soy sauce
  • 1/2 tbsp chinese black vinegar
  • 1/2 tbsp sichuan peppercorn oil
  • dash of salt
  • ramen noodles or thick egg noddles for 5 persons

Instructions

  • 1. In a frying pan, heat 1 tbsp vegetable oil and cook garlic and ginger until fragrant. Add doubanjian and cook.
  • 2. Add cashew nut and szechuan peppercorns and cook.
  • 3. Add ground pork and cook until no longer pink. Add chopped leek and cook lightly.
  • 4. Season with ingredient A. Cook for a few minutes and turn off the heat. Set aside.

  • 5. For the soup In a large saucepan, heat 1 tbsp oil, and cook garlic until fragrant. Add sesame, cashew nut and sesame paste and cook. Then add soy sauce and black vinegar. Set aside.
  • 6. In the prepared water (1600ml), add chicken powder to melt.
  • 7. In a large saucepan, add the soup from #6 gently. Bring to a boil. Then add sichuan peppercorn oil.
  • 8. Add dash of salt to your taste.
  • 9. All together now Cook noodles according to the package instructions and divide them between serving dishes and top with pork and leek/striped.
  • 10. Pour the soup over the noodles with some chili oil, if desired.

Dandan noodles - tantanmen

Ingredients

For the topping :

  • 480g ground beef
  • 20g fresh ginger - finely chopped
  • 4 garlic cloves - finely chopped
  • 2/3 leek (about 100g) - chopped
  • 80g zha cai - finely chopped
  • - Ingredient A -
  • 1 tbsp sweet bean sauce / Tian mian jiang or 1 tbsp white miso and 1 tsp white sugar
  • 1 tbsp shaoxing wine or white wine or cooking sake
  • 1/2 tbsp soy sauce
  • 1 1/2 tsp sugar
  • 1/2 tbsp sichuan peppercorn oil
  • 1 tsp apricot jam or strawberry jam
  • 1/2 tsp chinkiang vinegar
  • dash of salt

For the soup :

  • 2.5L water
  • 2 garlic cloves - finely chopped or grated
  • 20g fresh ginger - finely chopped
  • 1 tbsp sesame oil
  • 1/2 tbsp sichuan peppercorn oil
  • 2 tbsp sesame paste or homemade sesame paste (Please check NOTE.)
  • 40g tbsp weipa or 3 to 4 tbsp chinese chicken bouillon powder
  • 1/2 tbsp chinkiang vinegar
  • 2 1/2 tsp kosher salt
  • 1 tbsp oyster sauce
  • 1/2 tbsp or more spicy chili crisp - I put it less so that kids can eat. But if you like spicy, add more :)
  • some green parts of leek
  • some of ra-yu to make more spicily
  • egg noodles or ramen noodles for 5 people

NOTE

  • If it is difficult to get those noodles, then use "Barilla Capellini No. 1". When you cook pasta in boiling water, just add 2 to 3 tbsp of baking soda (1 tbsp baking soda per 1 liter of water). The pasta will turn more Ramen-like, and that's all you need to do. It is quite helpful when you are busy :-)

Instructions

  • 1. Making the beef topping In a frying pan, heat 1 to 2 tbsp oil and fry garlic and ginger until fragrant. Add zha cai, leek and ground beef, continue stir frying until no longer pink. Add the ingredient A and fry for a few more minutes. Set aside.

For the soup

  • 2. In a cooking pot, heat 1 tbsp sesame oil and sichuan peppercorn oil. Fry the garlic and ginger until fragrant and add 1 to 2 tbsp of beef mixture which you made just above and sesame paste. Cook them for a few minutes.
  • 3. Pour water and leek (the green part) and bring it to a boil. Once it boils, add the seasoning for soup (weipa, vinegar and salt.) Simmer for a few minutes. Remove the green parts of leek.
  • 4. Cook the noodles according to its packaging and drain well. Place the boiled noodles into individual serving bowls and pour the soup, then top with ground beef.
  • Garnish with some rayu, if you like,

Notes

If you don\\\\\\\'t have sesame paste at home, then make it at home :)

Add 2 tbsp roasted white sesame and 1 tbsp sesame oil in a blender cup, and blend them until paste.
