Easy quick Pizza

Ingredients

- Ingredient A -

  • 150g all-purpose flour (T55)
  • 1g saf instant yeast
  • 1/4 tsp salt
  • 10g sugar
  • 10g olive oil
  • 85g warm water

For the topping

  • 100g tomato sauce
  • anything else you like (ham, onions, bacon, egg, zucchini, eggplant etc...)
  • grated cheese as much as you want

Instructions

  • 1. Add all ingredients "A" and hand whisk together to combine in your stand mixer bowl. Fit it with the dough hook. Slowly pour in warm water, scraping down the sides of the bowl as needed, mix at the lowest speed until the dough comes together.
  • 2. Transfer the dough out to a lightly floured surface. Shape the dough into a ball, wrap it in plastic wrap and let it rest for about 15 minutes.
  • 3. Transfer the dough onto a lightly floured surface. Using a rolling pin, roll the dough to a circle shape. The thinner you roll out, the crispier!
  • 4. Decorate your pizza with tomato sauce and your favorite toppings. Then last with cheese too!
  • 5. Pre-heat the oven to 230℃ degree. Bake the pizza for 10~15 minutes or until golden and crisp.

Airy and light meringue cake

Ingredients

  • 3 eggs
  • 60g plain or cake flour (T45) - sifted
  • 12g corn starch - sifted
  • 80g white sugar

- Ingredient A -

  • 1 tbsp confectioners sugar
  • 1 tbsp corn starch

For the filling cream

  • 350g heavy cream (more than 35% fat)
  • 35g white sugar
  • 8g cremfix (whipped cream stabilizer) - better use this if your cream is less than 35% fat
  • Some of your favorite fruits (strawberries, bananas, peach, mango etc...) - Slice thinly

Instructions

Making the meringue cakes

  • Preheat the oven to 180℃ degree and line a baking tray with parchment paper.
  • 1. In a stand mixer, beat the egg whites until soft peaks form. Slowly add the sugar (70g), and continue to beat until the meringue is thick, glossy and very stiff.
  • 2. Add egg yolk one by one, and mix until obtain a cream.
  • 3. Add the sifted flour and mix with a spatula, until just incorporated.
  • 4. Spread the cake dough into a circle (about 20 cm diameter) on the prepared baking tray. Smoothen the top of the cake.
  • 5. Sift "B" (confectioners sugar, then the corn starch) over the cake.
  • 6. Use the back of a knife or spoon to make decorative lines (see photo).
  • 7. Bake for about 20 mins at 180℃ degree. Remove from the oven and let it cool to room temperature on the wire rack.

For the filling cream

  • 8. In a mixing bowl, combine the whipping cream and sugar, beat at high speed until stiff.

All together now

  • 9. Slice the cake horizontally into 2 layers. Spread half of the whipped cream evenly onto the bottom layer. Arrange fruits slices evenly over the cream and top with the other half of the whipped cream to cover the fruits. Place the top cake layer above.
  • Chill the cake for a few hours before serving.

Easy wonton soup

Ingredients

- Ingredient A -

  • 200g ground pork
  • 1 leek - finely chopped
  • dash of salt
  • 1 tsp cooking sake or white wine
  • 1/2 egg
  • 1/3 tsp white sugar
  • 1/2 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp ginger powder

- Ingredient B -

  • some of green parts of leek
  • 1.3 L water
  • 30g weipa or gara soup or chicken powder
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • dash of salt to taste
  • 25 to 30 wonton wrappers
  • some of scallions to garnish

Instructions

  • 1. In a bowl add all the ingredient A and knead the mixture until well combined and sticky.
  • 2. Place a spoonful of the mixture in the center of a wonton wrapper. Wet the edge of wrapper with fingertip. Fold over and seal to close once, then wet each tip and fold in half to close again as per picture. Continue with the rest of the wonton wrappers until you used all filling.
  • Advice : Sprinkle some flour on the wontons if you are not going to cook them immediately. It will prevent them from sticking to each other.
  • 3. In a cooking pot, add all the ingredient B and bring it to boil. Set aside until the wontons are ready. This will be your soup.
  • 4. Bring a separate pot of water to a boil. Place the wontons and cook for about 5 to 6 minutes or until they float.
  • 5. Remove the wontons with a slotted spoon and put them in serving bowls. Pour the soup from #3 over the wontons and garnish with scallions.
  • Serve hot!

Leek pasta paste

Ingredients

  • 5 leeks - cut into small pieces
  • 5 garlic cloves - cut in slices
  • 30g cashew nuts or pistachio

- Ingredient A -

  • 1 tsp fine salt
  • 1 tsp ginger powder
  • 2 tbsp white wine or cooking sake
  • 1 tbsp sweet soy sauce
  • 1 tbsp soy sauce
  • 3 tbsp sesame
  • 1 cup of hot water in which you boiled pasta
  • dash of salt to taste
  • 3 tbsp sesame oil
  • any pasta for 5 people
  • some parmesan cheese

Instructions

  • 1. In a frying-pan, heat the oil and fry the garlic until fragrant. Add the leek and nuts until wilted. Add all ingredient A to season. Let it cool to room temperature.
  • 2. Transfer into your food processor, pulse a few seconds at a time, until smooth or the desired consistency. Add sesame oil and mix.
  • 3. Transfer the mixture into a skillet and add the cup of water(the one in which you boiled the pasta). Add some salt to taste.
  • 4. Serve with spaghetti or any other pasta of your choice! Sprinkle some of parmesan cheese if you like.

Breaded pork fillet

Ingredients

  • 500g pork filet

- Ingredient A -

  • 50g panko/bread crumbs
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp oyster sauce

- For the sauce -

  • 2 tbsp mayonnaise
  • 7 tbsp milk
  • 1 tbsp soy sauce
  • 1 tbsp Japanese worcestershire sauce or worcestershire sauce
  • 1 tbsp mirin
  • 2 tsp sugar

Instructions

  • 1. Season pork filet with pepper and salt.
  • 2. In a frying-pan, heat 1 tbsp olive oil and add all the ingredient A. Fry until nicely brown. Set aside. Pre-heat the oven to 120C degree.
  • 3. Place the pork filet onto a baking sheet or a baking dish. Sprinkle the panko/bread crumbs onto the pork evenly.
  • 4. Bake the pork at 120C degree for about 2 hours or until meat is cooked through.
  • 5. In a small bowl, add the sauce ingredient and mix.
  • Serve with the sauce!

Ingredients

  • 3 to 5 garlic cloves - finely chopped
  • 25g fresh ginger - finely chopped
  • 25g cashew nuts or almond- grounded to paste (add 1 tsp honey to make)
  • 1 tsp ginger powder
  • 2 tsp garlic powder
  • 50g or more thai yellow curry paste
  • 1 carrot - cut into matchsticks
  • 1 onion or red onion - cut into matchsticks
  • 1 red bell pepper - cut into matchsticks
  • 400g pork (or chicken ) - cut into bite sizes
  • 1 can coconut milk - about 400g
  • 150g water
  • 1/2 tsp chicken powder
  • 1 tsp thai fish sauce
  • 1 tbsp brown sugar
  • a dash of salt to taste

Instructions

  • 1. In a cooking pot, add 1 tbsp vegetable oil and stir-fry ginger and garlic until aromatic. Add cashew nuts paste, ginger powder, garlic powder and yellow curry paste and stir fry until fragrant.
  • 2. Add onion, carrot and pork, stir fry until wilted.
  • 3. Pour the coconut milk and water and add chicken powder, fish sauce. Bring to a boil and then simmer for about 5 mins over medium-low heat.
  • 4. Add red bell pepper and bring to a boil again, simmer for about 1 to 2 mins over medium-low heat. Add a dash of salt to taste. Remove from the heat.
  • Serve with hot steamed rice!
