Pound cake with pearl sugar

Ingredients

  • 100g cake flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 50g unsalted butter - at room temperature
  • 1 tbsp coconut oil
  • 70g white sugar
  • 1 large egg
  • 50ml milk
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract

  • 20g pearl sugar

For the garnish

  • 10g pearl sugar

Instructions

  • 1. in a small cup, combine milk and lemon juice together, set it aside.
  • 2. Preheat oven to 190 C. Line the pound cake mold with parchment paper.
  • 3. In a medium bowl, using an electric mixer on high speed, beat butter, coconut oil and sugar until light and fluffy. Add egg, vanilla, milk and continue beating them well on low speed.
  • 4. Sift flour, baking powder and baking soda into the butter mixture gradually, mix them with an egg mixer until combined. Pour the batter into the pound cake mold, smoothing the top with a spatula.
  • 5. Sprinkle pearl sugar on top for decoration.
  • 6. Bake for about 25 to 30 minutes, until the top is nicely browned or a wooden pick inserted in the middle of cake comes out clean.
  • Let it cool down completely in the mold on a wire rack.
