Ingredients
- 5 tbsp olive oil
- 2 x 400g cans chopped tomatoes
- 3 garlic cloves - finely chopped
- 1/2 onion - finely chopped
- 2 tbsp tomato puree
- 2 tbsp ketchup
- 10 - 15g fresh thyme
- 1 tsp soy sauce
- 1/2 tbsp garlic powder
- 1 tsp kosher salt
- 1 tsp cane sugar
- 5g black chocolate
- a dash of pepper
Instructions
- 1. Heat the Olive oil in a medium cooking pot and add chopped garlic and onion. Once they begin to color lightly, add all other remaining ingredients gradually : tomato cans, tomato puree, fresh thyme, soy sauce, garlic powder, kosher salt, black chocolate, ketchup, sugar.
- 2. Stir & simmer over medium heat. Reduce heat to low and simmer tomato sauce until it is reduced by about half, stirring occasionally. Check the seasonings add more salt or pepper if required.
- 3. Meanwhile, cook the pasta in a large saucepan of boiling water until al dente, probably a little bit less time than what packet instructions usually say. Drain them.
- 4. Dress with the sauce over the cooked pasta and toss to combine. Serve hot.
