Ingredients
- 160ml coconut milk
- 3 tbsp white sugar
- 100ml milk
- 45g milk chocolate
- 3 tbsp yogurt - no sugar added
- 80ml heavy cream - beat until firm peaks form
Instructions
- 1. In a milk pan, add coconut milk and sugar and bring to a boil. Remove from the heat and add milk. Mix well.
- 2. In a micro-wave safe bowl, add chocolate and micro-wave for about 1 min (do not overheat). Stir until the chocolate has melted.
- 3. Transfer the melted chocolate in a medium bowl, pour the hot milk mixture into chocolate little by little and mix well in each case.
- 4. Add yogurt and mix well.
- 5. In a separate bowl, beat the heavy cream until firm peaks form. Add the milk mixture which you just made little by little. Mix them well to combine evenly.
- 6. Pour the coconut chocolate ice mixture evenly into ice pop mold and pop in your ice sticks then freeze for at least 3-5 hours or until firm.
- Adjust the sweetness according your taste.
