Watermelon mousse

Watermelon mousse

Ingredients

  • -Ingredient A-
  • 400g watermelon
  • 170ml milk
  • 3g lemon juice
  • 2 tbsp white sugar
  • 2 tbsp vanilla syrup
  • 100ml heavy cream - beat until soft peaks form

  • -Ingredient B-
  • 9g gelatin
  • 50ml water

For the top jelly

  • 30ml grenadine syrup
  • 100ml water
  • 3g gelatin
  • 30ml water

Instructions

  • 1. Put all ingredients A in your blender and juice it all. Transfer into a medium bowl.
  • 2. Add the whipped cream into the watermelon mixture and mix well.
  • 3. In a microwave-safe case, add 50ml water, gelatin and micro-wave it for about 15 seconds. Remove from the microwave oven and mix it to melt the gelatin.
  • 4. Pour the gelatin mixture into the watermelon mousse mixture and mix well. Spoon the mixture into your dessert serving cups. Chill for about 3 to 4 hours or until set.
  • 5. When the mousse has set, start making grenadine jelly on top :
  • -a- In a small bowl, combine grenadine syrup and water. Set aside.
  • -b- In a micro-wave safe cup, add 30ml water and 3g gelatin. Micro-wave for 10 to 15 seconds, remove from the micro-wave and mix well to melt the gelatin.
  • -c- Add the gelatin mixture into grenadine mix (the one from 5a) and mix well. Pour the grenadine mixture over the firm watermelon mousse.
  • 6. Refrigerate again until set.
  • Serve with whipped cream on top (well, only if you like it).

  • Adjust the sweetness according to your taste.
