Ingredients
- 500g ground pork
- 35g fresh ginger - finely chopped
- 5 garlic cloves - finely chopped
- 1 tomato - (180g) - chopped
- 2 eggplant - (450g) - cut into about 1.5cm cubes
- 1 onion - finely chopped
- 120g celery - finely chopped
- 100g coriander - chopped
- 1 tomato can - 400g
- 200ml water
For the seasoning
- 120g curry sauce
- 1 tsp garlic powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp seasoning sauce
- 1/2 tbsp soy sauce
- 1 tbsp ketchup
- 1/2 tsp fine salt
Instructions
- 1. Heat 1 tbsp vegetable oil and fry garlic and ginger until fragrant. Add ground pork, onion, celery, eggplant and tomato and continue stirring until cooked.
- 2. Add tomato can and water. Turn the heat to low and simmer for about 40 mins.
- 3. Add coriander and all the seasoning ingredients. Cover and let simmer for 15 minutes more.
- Serve with steamed rice!
