Eggplant and Ground Pork Curry

Ingredients

  • 500g ground pork
  • 35g fresh ginger - finely chopped
  • 5 garlic cloves - finely chopped
  • 1 tomato - (180g) - chopped
  • 2 eggplant - (450g) - cut into about 1.5cm cubes
  • 1 onion - finely chopped
  • 120g celery - finely chopped
  • 100g coriander - chopped
  • 1 tomato can - 400g
  • 200ml water

For the seasoning

  • 120g curry sauce
  • 1 tsp garlic powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp seasoning sauce
  • 1/2 tbsp soy sauce
  • 1 tbsp ketchup
  • 1/2 tsp fine salt

Instructions

  • 1. Heat 1 tbsp vegetable oil and fry garlic and ginger until fragrant. Add ground pork, onion, celery, eggplant and tomato and continue stirring until cooked.
  • 2. Add tomato can and water. Turn the heat to low and simmer for about 40 mins.
  • 3. Add coriander and all the seasoning ingredients. Cover and let simmer for 15 minutes more.
  • Serve with steamed rice!
