Ingredients
- 50g lemon juice
- 50g condensed milk
- 3 tbsp honey
- 220g yogurt - plain
- 200ml milk
- 1 tbsp white sugar
- 140ml heavy cream - beat until soft peaks form
- 5g lemon zest
- 10g gelatin
- 50ml water
For the top jelly
- - ingredient A -
- 250ml water
- 2 tbsp white sugar
- 2 tsp lemon juice
- 1 tbsp honey
- 30ml water
- 6g gelatin
Instructions
- 1. Pour the lemon juice in a small bowl, add condensed milk into the bowl little by little and mix well.
- Add sugar and honey and mix them to combine evenly.
- 2. Add yogurt drop by drop and mix well. Pour the milk and mix well.
- 3. Pour heavy cream into another medium bowl, add the lemon mousse mixture into the heavy cream and mix well. Add lemon zest.
- 4. In a microwave-safe case, add 50ml water, gelatin (10g) and micro-wave for about 15 seconds. Remove from the microwave and mix them to melt the gelatin.
- 5. Pour the gelatin mixture into the mousse mixture and mix well. Spoon the mixture into your dessert serving cups. Chill for about 3 to 4 hours or until set.
- 6.When the lemon mousse has set, start making the jelly on top: In a small bowl, combine all ingredient "A". Set aside.
- 7. In a microwave safe cup, add 30ml water and 6g gelatin. Microwave for 10 to 15 seconds, remove from the micro-wave and mix well to melt the gelatin.
- 8. Add the gelatin mixture into lemon jelly mixture and mix well.
- 9. Pour the lemon jelly mixture over the firm lemon mousse. Refrigerate again until set.
- Serve with whipped cream on top if desired (to your taste).
- Adjust the sweetness according your taste.
