Tamago furikake / Japanese rice seasoning

Ingredients

  • 2 eggs - beated
  • 1/2 tbsp vegetable oil
  • 5g katsuobushi / Japanese bonito flakes - optional
  • 2 tbsp white sesame
  • - Ingredient A -
  • 1/2 tsp brown sugar
  • 3g butter
  • 1 1/2 tsp soy sauce
  • 1 1/2 mirin
  • 1/2 tsp honey
  • 1 tsp maple syrup
  • dash of salt
  • 1 nori / seaweed - cut into small pieces with scissors

Instructions

  • 1. In a frying pan, heat 1/2 tbsp oil over medium low-heat and make a finely scrambled egg. Cook the egg for about 20 mins until crisply.
  • 2. Remove the egg from the pan, and cook katsuobushi and sesame for about 1 to 2 mins. Add the ingredient A and fry more for about 2 to 3 mins. Let it cool and set aside.
  • 3. Process the fried scrambled egg until finely ground in a food processor.
  • 4. Mix with katsuobushi mixture and egg together.
  • 5. Add nori/seaweed and mix. Transfer to a jar with a tight fitting lid.
  • Serve over warm rice!
