Ingredients
- 250g sun-dried tomato - (not oil-packed)
- 4 garlic cloves - finely minced
- 1 onion - finely minced
- 1 tbsp olive oil
- - Ingredient A -
- 1 tsp soy sauce
- 2 tbsp brown sugar
- 1 bay leaf
- 1 tsp fine salt (optional - depend on your dried tomatoes)
- 380ml olive oil
- 160ml water (which you soak dried tomatoes.)
Instructions
- 1. Wash lightly dried tomatoes and drain. Soak the sun-dried tomatoes in a boiling water for 15 minutes (just to cover the tomatoes). Keep this water to use later on. Drain the tomatoes and transfer to a food processor, then process until smooth. Set aside.
- 2. Heat the olive oil (1 tbsp) over medium-low heat. Fry the garlic until fragrant, then add the onion. Continue stiring them until the onions are tender.
- 3. Add the tomato paste and cook more for a few minutes, stirring frequently. Add all the ingredient A, olive oil and the water which you soak the dried tomatoes. Bring to a boil over high heat and then reduce the heat to low. Simmer it for about 20 to 30 mins.
- Use immediately with hot pasta or you can keep it in a jar in the refrigerator until ready to use. Alternatively, the leftover tomato paste can be frozen in a zip-lock bag.
