Dried tomato paste for pasta or…

Dried tomato paste for pasta or…

Ingredients

  • 250g sun-dried tomato - (not oil-packed)
  • 4 garlic cloves - finely minced
  • 1 onion - finely minced
  • 1 tbsp olive oil
  • - Ingredient A -
  • 1 tsp soy sauce
  • 2 tbsp brown sugar
  • 1 bay leaf
  • 1 tsp fine salt (optional - depend on your dried tomatoes)
  • 380ml olive oil
  • 160ml water (which you soak dried tomatoes.)

Instructions

  • 1. Wash lightly dried tomatoes and drain. Soak the sun-dried tomatoes in a boiling water for 15 minutes (just to cover the tomatoes). Keep this water to use later on. Drain the tomatoes and transfer to a food processor, then process until smooth. Set aside.
  • 2. Heat the olive oil (1 tbsp) over medium-low heat. Fry the garlic until fragrant, then add the onion. Continue stiring them until the onions are tender.
  • 3. Add the tomato paste and cook more for a few minutes, stirring frequently. Add all the ingredient A, olive oil and the water which you soak the dried tomatoes. Bring to a boil over high heat and then reduce the heat to low. Simmer it for about 20 to 30 mins.
  • Use immediately with hot pasta or you can keep it in a jar in the refrigerator until ready to use. Alternatively, the leftover tomato paste can be frozen in a zip-lock bag.
