Tarte flambée -Flammekueche

Ingredients

For the dough - 3 tarte flambées

  • 100g bread flour (T65)
  • 300g plain flour/cake flour (T45)
  • 35g olive oil (or vegetable oil)
  • 3g (1/2 tsp) fine salt
  • 190~230ml water at room temperature

For the cream

  • 250g sour cream
  • 50ml heavy cream
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp fine salt

For the toppings

  • 300 bacon or more if you like
  • grated cheese as you want
  • onion (finely chopped)
  • --------------------------------------------------------------------

For the dough - 5 tarte flambées

  • 150g bread flour (T65)
  • 450g plain flour/cake flour (T45)
  • 50g olive oil (or vegetable oil)
  • 5g fine salt
  • 285~350ml water at room temperature

For the cream

  • 380g sour cream
  • 70ml heavy cream
  • 1 1/2 tsp soy sauce
  • 1 1/2 tsp sugar
  • 1/2 tsp fine salt

For the toppings

  • 500 bacon or more if you like
  • grated cheese as you want
  • onion (finely chopped)
  • --------------------------------------------------------------------

For the dough - 1 tarte flambée

  • 30g bread flour (T65)
  • 90g plain flour/cake flour (T45)
  • 10g olive oil (or vegetable oil)
  • 1g fine salt
  • 57~70ml water at room temperature

For the cream

  • 70g sour cream
  • 15ml heavy cream
  • 1/3 tsp soy sauce
  • 1/3 tsp sugar
  • a dash of fine salt

For the toppings

  • 100 bacon or more if you like
  • grated cheese as you want
  • onion (finely chopped)

Instructions

  • 1. Make the dough: Fit your standing electric mixer with its dough hook. In the bowl, combine flour, olive oil, salt, and water. Start on a low speed, then gradually increase the speed to medium until a ball forms.
  • If you don't have a stand mixer : in a large bowl, mix together all ingredients and knead until a ball forms.
  • 2. Divide the dough into 3 or 4 equal pieces and roll out each as thin as possible until flat on the baking sheet directly. Transfer the baking sheet onto the oven tray. Pre-heat the oven to 250C degree.
  • 3. For the cream : mix all the cream ingredient in a small bowl. Spread the cream evenly over the "tarte flambée" which is rolled out. Then sprinkle the bacon and grated cheese evenly onto the cream.
  • 4. Bake in the preheated oven for about 10 to 12 min or until golden brown and the dough looks crispy. Remove from the oven and transfer to a cutting board. Slice into squares and serve to eat immediately!

    This is a great recipe! It comes out exactly like the ones I’ve had in France and Old Quebec city. I will definitely make again. No bacon (I’m vegetarian) but made caramelized onions for the top.
