Ingredients
- 2 zucchini - slice thinly
- 550g ground pork
- 3 garlic cloves - finely chopped
- 15g fresh ginger - finely chopped
- 1 leek (130g) - finely chopped
- 1 egg
- Ingredient A -
- 2 tbsp katakuriko/potato starch
- 1 tbsp mayonnaise
- 1 tsp fine salt
- 1 tsp sugar
- 1 tsp soy sauce
- some flour
For the sauce
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1/2 tbsp sesame oil
Instructions
- 1. Make filling : In a large bowl, add ground pork, garlic, ginger, leek and egg and mix well to combine evenly. Add the ingredient A and mix well.
- 2. Coat the sliced zucchini with flour. On a slice of zucchini, place about 1 tbsp filling and spread. Cover with another slice of zucchini on top and press down to make a sandwich!
- 3. Heat the oil in a frying pan over medium-high heat and place the zucchini sandwich nice and slowly in the oil to avoid the zucchini coming off from the filling. Cook them, gently flipping them until they are lightly browned on both side. Finally simmer (for about 10 mins) with a lid over gentle heat.
- In a small cup, add all the sauce ingredient and mix well. Serve with zucchini sandwich!
