Japanese Chashu/Char Siu

Japanese Chashu Braised Pork Belly

Japanese Chashu Braised Pork Belly

Ingredients

  • 650g pork belly in a single chunk - (or up to 1kg) - rindless and boneless
  • 20g fresh ginger - cut in half
  • 2 garlic cloves - cut in half
  • 1 green parts of leek

For the marinade :

  • 2 tbsp mirin
  • 50ml soy sauce
  • 50ml cooking wine or cooking sake
  • 2 tbsp white sugar
  • 1 garlic - grated
  • water (I used 3L for this recipe)

Instructions

  • 1. Roll up the pork belly and tie up with a cooking string.
  • 2. Place the pork, green parts of a leek, garlic, and ginger in a large cooking pot. Pour enough water to cover the pork (I added about 3L this time).
  • 3. Cook over high heat and bring it to a boil. Skim off any foam from the surface, then reduce the heat to low. Cover with aluminium and simmer for 2 hours, turning the pork occasionally (lowest heat).
  • 4. Meanwhile we make the marinade sauce! In a small cooking pot, add all the marinade sauce ingredients except the grated garlic. Heat over medium-high heat and bring it to a boil. Remove from the heat and set is aside until the pork is ready.
  • 5. After the 2 hour simmering Transfer the marinade sauce into a bowl and add the grated garlic. Take the pork out and place it on a plate. Don't throw away the broth, if you make Ramen :). Roast the outside of the pork with a cooking torch if you can.
  • 6. Transfer the pork into the marinade sauce and coat it on all sides with it. Let it sit until it cools to room temperature.
  • 7. Transfer the pork and sauce into a zip-lock back and marinate overnight in the fridge.
  • 8. Next Day Transfer onto a cutting board, remove the thread and slice :)
  • Use it for ramen topping, char siu don or fried-rice!

Notes

Note : Keep the broth in which you boiled the pork if you are making ramen.

Baked Pork Chops

Ingredients

  • 4 medium pork chops
  • salt and pepper
  • some plain flour (T45 or cake flour)

For the sauce

  • 1/2 onion - finely chopped
  • 3 tbsp soy sauce
  • 2 1/2 tbsp sugar
  • 1 tbsp oyster sauce
  • 50ml water
  • 1 tbsp ketchup
  • 1/2 tbsp maple syrup
  • 1 tbsp mirin
  • 1/2 tbsp vegetable oil
  • 2 garlic cloves - finely chopped
  • 25g fresh ginger - finely chopped

Instructions

  • 1. In a small bowl, add all the sauce ingredients and mix. Set aside.
  • 2. Make light cuts on the surface of the pork with the tip of a knife. Season them with salt and pepper. Set aside.
  • 3. In a skillet, heat some oil over medium heat. When the skillet is hot, place the pork chops gently. Sear until golden, turning occasionally. The cooking time will depend on the thickness of the meat.
  • 4. Pour all the sauce in one go onto the pork and simmer for about 2 to 3min.
  • 5. Serve hot!

Pork and Cheese gyoza

Ingredients

  • 430g minced pork or boneless pork(cut into small pieces)
  • 150g cheese - cut into small pieces
  • 120g leek - roughly chopped
  • 1 tbsp soy sauce
  • a dash of pepper
  • 5 to 6 garlic cloves ( about 45 g )
  • 60ml milk
  • 40ml water
  • 1 tbsp olive oil
  • 1 tsp fine salt
  • 1 to 2 pack of gyoza wrappers

For the sauce

  • 2 tbsp rice vinegar / apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 tsp sugar

Instructions

  • 1. In a small cooking pot, add milk and water and cook the garlic until wilted. Drain and smash the garlic with a folk (or your hand blender). Mix with olive oil and salt. Set aside.
  • 2. In a bowl, add pork, cheese, chopped leek, pepper, soy sauce and garlic (from No.1) and mix well.
  • 3. Place a spoonful of the mixture in the center of a gyoza wrapper. Wet the edge of wrapper with fingertip. Fold over and seal to close. Continue with the rest of the gyoza wrappers until you used all filling.
  • 4. Heat vegetable oil in a large frying pan over medium-high to high heat. Add several gyozas (quantity depends on your pan size). Cook them until golden brown and crispy on the bottom. Add hot water (about 100 to 120ml), cover pan with the lid and let it steam over medium heat until the water evaporates. Repeat with the remaining gyoza.
  • For the sauce In a small cup, add all the sauce ingredient and mix. Set aside.
  • 5. Serve hot with steamed rice!

Easy vegetable pork stir-fry

Ingredients

  • 650g pork tenderloin - 3 to 5 cm strips or thin 'usugiri' slices
  • 2 garlic cloves - finely chopped
  • 1 onion - sliced
  • 1 carrot - large green pepper - cut into strips
  • 1/2 green bell pepper - cut into strips

- Ingredient A -

  • 1 tsp dashida
  • 90g white miso
  • 2 tbsp cooking sake or white wine
  • 2 tbsp mirin
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp ginger powder
  • 50ml water
  • 100g grated cheese

Instructions

  • 1. In a skillet, heat 1 tbsp oil and fry the garlic until fragrant. Add pork, onion and carrot and stir fry until wilted and meat is no longer pink, stir-frying continuously.
  • 2. Add green bell pepper and stir-fry for 2 more minutes.
  • 3. Add ingredient A to season. Add the grated cheese and cook for a few more minutes or until cheese has melted.
  • 4. Serve with hot steamed rice!

Breaded pork fillet

Ingredients

  • 500g pork filet

- Ingredient A -

  • 50g panko/bread crumbs
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp oyster sauce

- For the sauce -

  • 2 tbsp mayonnaise
  • 7 tbsp milk
  • 1 tbsp soy sauce
  • 1 tbsp Japanese worcestershire sauce or worcestershire sauce
  • 1 tbsp mirin
  • 2 tsp sugar

Instructions

  • 1. Season pork filet with pepper and salt.
  • 2. In a frying-pan, heat 1 tbsp olive oil and add all the ingredient A. Fry until nicely brown. Set aside. Pre-heat the oven to 120C degree.
  • 3. Place the pork filet onto a baking sheet or a baking dish. Sprinkle the panko/bread crumbs onto the pork evenly.
  • 4. Bake the pork at 120C degree for about 2 hours or until meat is cooked through.
  • 5. In a small bowl, add the sauce ingredient and mix.
  • Serve with the sauce!

Easy ground pork rice

Ingredients

  • 480g ground pork
  • 3 garlic cloves - finely chopped
  • 1 red bell pepper - finely chopped
  • 1 onion - finely chopped

- Ingredient A -

  • 40g butter
  • 1/2 tsp sugar
  • 1 tbsp seasoning sauce
  • 1 tbsp thai oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tbsp white sesame
  • 1/2 tsp ginger powder
  • 1 tsp fish sauce
  • dash of salt to taste

Instructions

  • 1. In a skillet, heat 1 tbsp vegetable oil and fry the garlic until fragrant. Add ground pork, red bell pepper and onion. Saute until pork is no longer pink.
  • 2. Combine all the ingredient "A" to season. Stir well to mix well.
  • 3. Serve with steamed hot rice!
